Vegetable Biriyani



Vegetable Biriyani is one of the flavourful Indian dishes. Biriyani is cooked with Basmati rice, mixed veggies and spice powders. You can use coconut water instead of plain water for better taste. You can serve with Egg curry and raita.

Ingredients 
Basmati Rice - 1 Cup (I used Coffee mug)
Oil - 2 tbsp
Ghee - 2 tbsp
Onion(Big) - 1 Chop into thin slices lengthwise
Tomato(Big) - 1 Chop into thin slices lengthwise
GingerGarlic paste - 1 tsp or 1 1/2 tsp
Curd - 1 tbsp
Lemon - 1/8 portion(if you want more tanginess add 1/4 lemon)
Mint leaves - 1 handful
Water - 1 1/2 cup for 1 cup rice
Salt to taste(Also I have added twice once when sautéing the onion and Next when adding the chopped veggies)

Whole Spices
Bay leaf - 1
Fennel seeds - 1 tsp
Cumin seeds - 1/2 or 1 tsp
Cinnamon - 1 small stick
Cloves - 3 or 4
If you want add 1 star-anise

Spice Powder(if you want add more or less as per your taste)
Turmeric powder - 1/4 tsp
Red Chilli powder - 1 tbsp
Coriander powder - 1 tsp
Garam masala or Biriyani masala - 1 or 1 1/2 tsp

Vegetables (add as of your choice like cauliflower, capsicum)
Potato - 1
Carrot - 2
Beans - 1/2 Cup
Peas - 1/2 Cup

Preparation:
Wash thoroughly and Soak the basmati rice in water for half an hour(you can soak the rice and start preparation and cooking).
Chop the onion tomato and all the veggies. Keep ginger garlic paste, mint leaves, whole spices, masala powder, Vegetables, curd, lemon ready.






Cooking:
  • Heat oil and ghee in pressure cooker.
  • Add the whole spices(Bay leaf, fennel, cumin, cinnamon, cloves) leave it for two seconds.
  • Add chopped onion and little salt - sauté it till it turns transparent.


    • Add ginger garlic paste and sauté it till the raw smell leaves.
    • Add in the sliced tomato, sauté it and cook for 3 to 4 minutes till it gets mushy.
    • Add all the masala powders, mix it and cook till the masala smell leaves.
    • Add mint leaf, curd and mix it well.
    • Add all the chopped vegetables and salt as needed and mix well and cook for five minutes.



    • Add the soaked rice and 1 1/2 cup of water and the lemon juice and give a gentle mix. Check for the salt and add as per your taste(After mixing when you taste the water, it has to be little extra salty and spicy so when it gets cooked the taste will be perfect).
    • Close the lid with whistle. Keep it for one whistle in sim and switch off or Keep it in sim for 15 mins and switch off the stove.

    • Open the cooker once after all the steam goes and transfer the cooked rice to hotbox or any other vessel so it wont get stick.
    • Serve the veg biriyani with raita/egg/any 65 recipes.
